The Ultimate Paleo Buffalo Chicken Dip

When I say this is my favorite savory recipe out of ALL of the recipes on my blog, I can say that with complete confidence! I am OBSESSED with this Paleo Buffalo Chicken Dip! I’ve been making it for YEARS and it still never gets old or fails to disappoint. For starters it is made up of 4, YES 4, ingredients (minus the seasonings). And the 4 ingredients that it calls for are usually ingredients you probably already have on hand. This buffalo chicken dip is as easy as combining the 4 ingredients and seasonings and sticking it in the oven to bake for 25 min.! It makes a huge batch, 9 servings to be exact, that usually lasts me about a week in the fridge. And I use it countless different Leftover Recreation Recipes throughout the week.


This recipe is prefect to bake and store in the fridge for an easy quick snack or it is always a HUGE hit at pot lucks, parties, and work functions. People never believe that this healthy remake recipe is Paleo, Dairy-Free, Gluten-Free, Grain-Free, Refined Sugar-Free and made with only 4 ingredients! It tastes as close to “junk food” without being the real thing, but only weighing in at 235 calories per serving! PRO TIP: Use a glass pyrex cassorole dish, that comes with a storage lid, to mix all the ingredients in and also bake in! Then pop the lid on and store in the fridge or take with you to your party! NO CLEAN UP NECESSARY!

The list of ways I like to consume this dip are a mile long and I have created ENDLESS amounts of recipes using the leftovers of this Buffalo Chicken Dip!! My favorite foods to dip into this dip are hands down Grain-Free Tortilla Chips and Baby Carrots or Sliced Carrot Chips! There have been many nights that a serving of this dip and handful of chips was my dinner and it never disappoints. Lately my favorite Grain-Free Tortilla Chips are the From the Ground Up Cauliflower Tortilla Chips (NACHO FLAVOR!) But another tried and true favorite is any of the Siete Brand Grain Free Tortilla Chips, which are made out of almond flour.


ingredients:

-1 whole rotisserie chicken; skin and bones removed and shredded (OR 2 large chicken breast; cooked and shredded)
-1/2 avocado oil mayo
-1/3 cup Frank’s Red Hot Sauce
-1/8 cup nutritional yeast
-1 tsp onion powder
-1 tsp garlic powder
-Salt/pepper to taste

instructions:

1. Preheat oven to 350 degrees.

2. Remove the skin and de-bone a rotisserie chicken and shred the chicken. (Or bake 2 large boneless, skinless chicken breast and shred the chicken)

3. Add shredded chicken and all other ingredients to glass casserole dish. Stir to combine.

4. Taste and add more hot sauce if your prefer more spice/heat.

5. Bake 25 minutes. Serve immediately.

MAKES 9; 1/2 cup SERVINGS / APPROX. 235 CALS PER SERVING
