Paleo Strawberry Shortcake Parfaits

These Paleo Strawberry Shortcake Parfaits are light, fresh, and absolutely addicting! I start the parfaits off with a base of fluffy and light vanilla cake, topped with homemade dairy-free whipped cream, and fresh sliced strawberries.

These parfaits taste so decadent you would never know they were made from a BOX MIX!! The base of the this shortcake parfait starts with a box of vanilla cake mix, from one of the only brand of box mixes that I trust… Simple Mill’s. Simple Mill’s products are clean, nutritious and don’t include any artificial ingredients, ever! Which is unheard in the realm of boxed cake mixes. I always keep some boxes stocked up in my house for when I want a quick and easy dessert, that is full proof and I know will turn out good each and every time. For this recipe I used the Simple Mill’s Vanilla Cupcake and Cake Mix, which is made from almond flour, coconut flour, and coconut sugar… making it gluten-free, dairy-free and refined sugar-free! The mix itself is made up of only 7 ingredients, which I combined with eggs, vanilla extract, grapeseed oil, and water. I chose to bake them as cupcakes instead of 1 single cake so I could store the extras for later! AND it cuts down baking time to only 18 minutes! FAST, EASY, & NUTRITIOUS!

Next, I whip up a batch of the BEST EVER Dairy-Free Whipped Cream! My Dairy-Free Whipped Cream is Paleo, Vegan, and Refined Sugar-Free and made up of only 4 ingredients! It is one of my most used recipes because I use it in frostings, cheesecake fillings, topping for desserts etc. I even keep a bowl of it in my fridge to eat with fresh fruit. This whipped cream starts with a base of coconut cream that has been chilled in the fridge overnight. The ONLY brand of coconut cream I use is Nature’s Charm Coconut Whipping Cream. It is the only brand of coconut cream that produces consistent results every single time. Other brands will sometimes not harden enough, which leaves you with a liquidy consistency that won’t whip and hold it’s shape, but I’ve never had this issue with the Nature’s Charm brand. Finally, layer some fresh, sliced strawberries on top of the whipped cream in a stemless wine glass or mason jar and you have a super easy, healthy parfait that has a beautiful and elevated presentation!

These are great for a snack, after dinner dessert or even dessert for breakfast :) You can play around with adding different variations of fruits or even adding a few layers of my 3-ingredient Strawberry Chia Seed Jam! These would be great to make for an event, baby shower, or wedding in mini mason jars.

ingredients:

-1 box Simple Mill’s Vanilla Cupcake and Cake Mix
-1 tbsp vanilla extract
-1/3 cup grapeseed oil
-1/3 cup water
-3 eggs
-2 cups of Pre-made Dairy-Free Whipped Cream (find the full recipe: HERE)
-6 medium strawberries; sliced

instructions:

1. Preheat oven to 325 degrees and line a 12-cup muffin tin with cupcake liners.

2. Combine 3 eggs, oil, water, and vanilla extract in a large mixing bowl, add in dry box mix and stir to combine.

3.Fill 12 cupcake liners 2/3 way full.

4. Bake for 18-23 minutes. Remove from oven and let cool completely on a wire rack.

5. While the cupcakes are baking prepare the Dairy-Free Whipped Cream (Click HERE for the full recipe)

6. Remove 8 cupcakes from their wrappers and cut into square chunks. (Reserve remaining 4 cupcake for another recipe or enjoy on their own.)

7. To assemble parfaits, begin with 4 stemless wine glasses or mason jars, layer 1 chopped cupcake at the bottom of each glass or jar, top with 1/4 cup whipped cream, and lastly around 5 sliced strawberry pieces. Repeat this process again, ending with the dairy free whipped cream as the final layer.
